I Can't Stand It, I Know You Planned It
Oct. 13th, 2024 12:30 pmThis week's Resolution Recipe: Healthier Chinese Chicken Salad.
2 cups shredded Napa cabbage
8 oz poached chicken breast (I used house-cooked sous vide, which we try to keep in the freezer for this sort of thing)
1-2 carrots, shredded
1/2 red bell pepper, cored and cut into thin strips
2 Tbsp cilantro, plus more for sprinkling
2 Tbsp peanuts
Dressing:
3" ginger, peeled and minced
no garlic (Ha! I used... more.)
2 Tbsp rice vinegar
1 Tbsp soy sauce
1/4 tsp crushed red pepper
4 tsp water
1/4 tsp sugar
1 Tbsp veg oil
1 Tbsp sesame oil
Mix the dressing and set aside. In a medium bowl, mix well the cabbage, chicken, carrot, bell pepper, and 2 Tbsp cilantro. Stir in the dressing. Divide the salad between two bowls, sprinkle with additional cilantro, and chill. Top with peanuts before serving.
What worked: It was fine. Most of the unhealthy bits in a standard ChChSalad are the fried noodles and the delicious-but-not-healthy peanut dressing. (One recipe I have is a mixture of mayo and peanut butter.) Topping with peanuts helped quite a bit without adding too much unhealth.
What didn't: Not as satisfying in mouthfeel, but that's usually a price of a healthier dish like this.
Will I make it again? Probably.
