6 eggses, at room temperature
1/3 cup flour
1/2 lb cheddar (or other) cheese, grated
1 quart (32 oz) small-curd cottage cheese
1/2 cup unsalted butter, melted
dash of nutmeg
2 10-oz packages frozen spinach, thawed and well drained (only 1-lb packages were available; I used two because I thought extra spinach would be fine.)
no garlic (Ha! I used... more.)
Also added: several shallots, chopped
Heat oven to 350°. Grease a 9x13" baking dish. In a medium bowl, beat eggses slightly. In a (very) large bowl, stir together flour, cheddar, cottage cheese, butter, nutmeg, and spinach. Add the eggses and thoroughly combine. Pour mixture into baking dish and cook for 1 hour. Let cool for 5 minutes to set before serving.
What worked: This was tasty and filling for dinner. Having extra spinach in there wasn't a problem. I couldn't taste the garlic or shallot, but I am sure they added to it. It also made a good breakfast the next day.
This made a lot of leftovers, but we sealed and froze portions for future work breakfasts.
What didn't: I should have added pepper. Also more garlic and shallot, and maybe green onion. Mushrooms would have been good too, but I didn't want to further diverge from the actual recipe before trying it.
Will I make it again? Sure. Maybe a half batch though. The wife suggested using ricotta instead of cottage cheese.
