Ze Turkey Goes In Ze Pot

3 Tbsp olive oil
1 onion, diced
1 carrot, ditto
1 bunch sturdy greens, such as kale, broccoli rabe, mustard greens, collards... (I used broc rabe and lamb's quarters)
1 Tbsp tomato paste
3/4 tsp cumin
1/8 tsp red pepper flakes
1/2 lb ground turkey
3 cloves garlic, minced (Ha! I used... more.)
1 Tbsp grated fresh ginger
1 tsp salt
2 15-oz cans white beans, drained and rinsed (I assumed this meant the contents, not the cans)
4-6 cups chicken stock - less for heartier, more for brothier (I used about 4.5)
1 cup chopped soft fresh herbs, such as parsley, basil, mint... (I used chives and basil)
lemon juice to taste
Heat a large pot over medium-high heat for a minute or so, then add the oil and heat until it thins out, about 30 seconds, and this sentence finally ends. Add the onion and carrot and sauté 7-10 minutes until soft. Meanwhile, rinse the greens and stem as needed. Chop in bite-size chunks.
When the onion is golden, add the tomato paste, cumin, and red pepper flakes and sauté until the paste darkens, about a minute. Add the turkey, garlic, ginger, and salt, and sauté, breaking up the meat, for 4-7 minutes until the turkey is browned in spots. Add the beans and stock. Bring to a simmer and cook for 15-25 minutes. If you like a thicker broth, you can smash up some of the beans with the back of the spoon to release their starch.
Add the greens to the pot and simmer until soft, 5-10 minutes (or 15 for collards). Stir in the herbs and lemon juice, taste, and add cumin and lemon as needed.
What worked: This was quite good. Time consuming, but not difficult. I added about a lemon's worth of juice and it was bright in flavor. There was a slight bite from the red pepper - enough to be noticeable, but not too much. I didn't miss the salt, but that's my restricted diet; everyone else added some.
What didn't: Pretty happy with it.
Will I make it again? It's more of a winter soup than summer, but yes.
Resolution Recipes are probably on hiatus for a couple weeks. I have eaten into my buffer (ha), so I will have to get back into it when things free up a bit.
