"Baked beans is a favorite side dish, but it can take a long time to cook properly. Here is my quick stovetop version, with increased fruit and veg servings."
1 strip bacon, chopped (I used house-made)
1 tsp veg oil
1 yellow onion, chopped
no garlic (Ha! I used... more.)
1 small red bell pepper, diced
1 green apple, diced
1 15-oz can cannellini beans, drained and rinsed
2 Tbsp ketchup (I used house-made tomato paste)
1 Tbsp maple syrup or honey
1 Tbsp pomgar/malgar (aka cider vinegar)
Cook the bacon and oil together in a medium saucepan over medium heat, stirring occasionally, until crisp and browned - about 6 minutes. Add the onion, garlic, bell pepper, and apple. Cook, stirring occasionally for 5 minutes until the onion softens. Stir in the rest. Cook, stirring occasionally as usual by now for 10 minutes until the sauce has thickened slightly. Serve hot.
What worked: I was pleasantly surprised - this basically did taste like standard slow-cooked baked beans. Stirred occasionally.
What didn't: Eh, it was fine.
Will I make it again? Maybe.
