This week's Bonus Resolution Recipe: Strawberry Buttermilk Corn Cake.
Or, the continuing storrrrry of what do with all that masa.
1 1/2 cups flour
1/2 packed cup masa harina
1/2 cup sugar, plus extra for topping
1/3 cuplight dark brown sugar (I only keep dark in the house. What's the point of light brown?)
1 1/2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 cup Greek yogurt
2/3 cup butter, melted
1 lb (approx. 2 2/3 cups) hulled and halved strawberries
1/4 cup buttermilk (I used 1 cup milk + 1 Tbsp white vinegar)
2 eggses
Line a 9x12" pan with parchment. Heat the oven to 350°. Combine dry ingredients in a large bowl. Add yogurt, buttermilk, eggses, and butter and mix until smooth. Pour batter into the lined pan and top with the strawberries. If you're feeling extra, sprinkle with additional sugar.
Bake for 25-35 minutes. When the cake is a light golden brown and the toothpick test comes out clean, remove the cake and cool in the pan.
What worked: It was okay. Not too masa-y at least. It would have been improved with some whipped crème fraiche.
What didn't: 1 lb strawberries was way too much, especially with the picture showing lots of room in between them. One basket might be enough. Cooking time was nowhere close to 35 minutes; it took 55 to bake completely.
Will I make it again? Meh. It might be okay with roasted apple, and it is one of the more successful masa recipes I've made... but this still only uses 1/2 cup up.
