Okay, so I went lazy with this one. I never promised that the recipes would be complex, just that they'd be "new".
Spinach-Orange Salad
1 T balsamic vinegar
1 1/2 tsp honey
1 1/2 tsp water
1 tsp olive oil
1/2 tsp Dijon mustard
2 cups fresh spinach
1/2 cup sliced mushrooms
2 T chopped red or purple onion
1 orange, peeled and section
Combine first five ingredients together and stir vigourously. Chill.
Combine rest and toss. Drizzle dressing over. Serve. Eat.
What worked: it was a decent summer salad for a warm evening. Quick to prepare, which was good when I was feeling tired and uninspired. Fairly healthy.
What didn't: it was improved when I added chopped green garlic and a slight amount of slivered almonds. The crunch really helped.
Will I make it again? Maybe. I won't put this in my recipe box, but I might remember that it's in this particular cookbook.
