For those in the studio audience what have not been following along for the past year, I made a Non-Year's Resolution. Once per week, I would cook a recipe that I hadn't tried before. This would hopefully expand my usual repertoire, and help justify my large collection of cookbooks. (I've actually dumped a couple since, where I didn't like the recipes or they were too much of a pain to justify.)
So, without further ado, Baked Tomatoes -
2-4 largeish tomatoes, sliced 1/2" thick
2 green onions, chopped
several cloves garlic (to taste), minced
pinch salt & pepper
1 T grated Parmesan
shredded fresh basil or spinach
1 tsp chopped fresh oregano
Arrange tomato slices in a lightly greased baking tray. Sprinkle with green onions, garlic, salt & pepper. Bake at 350 for 10 minutes. Remove from oven and top with cheese, basil or spinach, and oregano. Serve warm.
What worked: This was extremely quick and easy. Healthy, too. Oh, and quite tasty. It was a very nice dinner using fresh, organic tomatoes, for a warm summer evening. You know, the kind of evening we normally have in June. When it's not raining.
What didn't: The cheese would have been better melted; I might bake it for 5 minutes.
Will I make it again? Probably. Especially when our home-grown tomatoes start producing. I made this with lamb's quarters (also known as fat hen), which is a spinach ancestor. I baked it for the ten minutes as it makes your teeth fuzzy when raw. Next time I'll try it with raw basil, which I think will work equally as well - just differently.
