In Washington, there's a USDA-licensed 8x12 trailer slaughterhouse. The guy drives it around to local meat farmers so they don't have to truck the carcasses 150 miles away.
Given the many difficulties in getting local abbatoirs approved, I hope that can be done here for the smaller-scale organic meat guys.
