Sep. 26th, 2005 01:49 pmBecause I have a business trip all next week, it is extremely unlikely that I will get any cooking done. Therefore, here is next week's Resolution Recipe.
Cocoa Snowflake Cookies
1 cup flour
1 tsp baking powder
1/4 tsp salt
5 Tbsp butter
6 Tbsp cocoa powder
1 cup sugar
1 tsp vanilla
2 eggses
1 cup chopped walnuts
powdered sugar
Mix flour, baking powder, salt. Melt butter and add cocoa, whisking until smooth. Remove from heat and stir in sugar. Transfer to a bowl and add vanilla, then eggses one at a time, mixing well each time. Add flour mixture and nuts and mix. Cover with plastic wrap and refrigerate for at least two hours (or overnight).
Heat oven to 400. Roll a hunk of dough into 3/4" ball, roll lightly in powdered sugar. Place balls 2" apart from each other on a greased cookie sheet. Bake eight to ten minutes, let sit one minute, then remove to waxed paper to cool. Store airtight.
What worked: Tasty little chocolate bombs.
What didn't: Er, I was pretty happy with them.
Will I make it again? Yeah, probably. It was pretty simple, although it was about 50 balls which took some time. You have to refrigerate the dough in between batches, too.
