Quinoa Waffles

1 cup white flour
1 cup wheat flour
2 Tbsp sugar
2 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
2 1/4 cups milk
2 eggses
1/4 cup vegetable oil
1 cup quinoa (or cracked wheat, or bulgur)

Mix together dry ingredients. In another bowl, whisk milk, eggeses, and oil. Add dry ingredients to wet ingredients, then quinoa. Whisk just until combined and let sit for at least 30 minutes to soak the quinoa.

Heat waffle iron and cook until done.

What worked: Dunno.
What didn't work: The waffle iron. One of the wires snapped, so it didn't heat up properly. I didn't discover this until I put on the first batch of batter, though.

Will I make it again? I probably won't bother. First, the waffle iron needs to be repaired, though.

I'll bet the batter would have made crunchy waffles!

That was the idea. It sounded good, anyway!
