A replacement
Feb. 17th, 2006 09:16 amSince neither of the previous two Valentine's Day Resolution Recipes were worth posting, here's a replacement recipe.
Chicken with dried mushrooms and wine
1 ounce dried mushrooms (I used oyster mushrooms)
1/2 to 1 cup water
8 chicken thighs (do not use boneless)
salt & pepper
flour
olive oil
one cup 1/2 to 3/4 cup white wine
2 cups 1/2 cup cream
Soak mushrooms in water to cover for 20 minutes. Sprinkle chicken with salt and pepper. Dredge in flour. Heat oil in a large pot; brown chicken for 10 minutes. Cover and simmer for 10-20 minutes, until it stops bleeding. Remove chicken and set aside. Pour in wine and scrape up all the good bits. Add mushrooms and water; boil for 5 minutes. Add cream and reduce for 5 minutes. Return chicken to sauce, simmer for 5 minutes more.
What worked: It was quite good over wild rice. Also spaeztle the next day.
What didn't: I reduced the wine and cream substantially; there was still plenty of sauce and it was still sufficiently rich.
Not really a "didn't work", but it reminded me of a high-end version of chicken in canned cream of mushroom soup. Which I had numerous times as a child.
Will I make it again? Sure, although there's no hurry.
