A pre-emption
Apr. 27th, 2006 08:43 amI don't plan on cooking a Resolution recipe next week. I'll be cooking a lot, but for the most part the meals will be things I've done before. So, here's next week's recipe.
Baccala in Cream Sauce
1/2 pound boneless dried cod
1 cup half-and-half
The night before, start the cod soaking in water. Weight it down. Change the water after two hours and change four or five times more over the next 24 hours.
Drain cod and cut into four pieces. Place in a heavy saucepan just big enough to hold it, and add the half-and-half. Simmer, covered, for about an hour. The fish should absorb the liquid, leaving what will look like fish chunks in light cream cheese.
Serve warm over polenta or couscous.
What worked: A good way to use up the rest of the dried cod. Easy.
What didn't: It wasn't very attractive.
Will I make it again? I won't go out of my way to do so, but sure.
