Again, even though I gave myself a pass (I'll be in NY all next week), here's an easy Resolution Recipe.
Cocoa Nib Cream

1/2 cup cream
1 Tbsp cocoa nibs, coarsely chopped
1/2 tsp sugar

Bring the cream and nibs to a boil in a small saucepan. Remove from heat, cover, and let stand for 20 minutes. Strain the cream into a bowl, pressing on the solids to extract all the liquid. Discard the nibs and chill the cream for at least six hours (it needs to be cold to whip).

Whip the cream, adding sugar as it thickens.

What worked: A nice variation on whipped cream. It went beautifully with (commercial) chocolate cake and decently with fresh strawberries. I bet it'd be faboo with the dairy-free mousse I made a while back; also, on Irish Coffee.

What didn't: I dunno, it came out about as I expected.

Will I make it again? Sure, as long as I have nibs.

What are cocoa nibs? They sound like they'd mess up the ink.
