Words I'd hoped never to have to write
Feb. 4th, 2007 11:32 amWe've been together a long time. Over fifteen years. You've been a major part of my life. It's no exaggeration to say that you were a big part of why I was elevated to the Laurel.
But -- things change. People change. What worked ten years ago doesn't quite, now. No big blowups (well, not many) but over time, the slow changes mean a big difference between now and the way things were.
I'm sorry to say it, but all of a sudden it seems that the chemistry just isn't there anymore.
I think it's best if we start afresh.
Separately.
That's why I had to order a new sourdough culture.

Date: 2007-02-04 11:28 pm (UTC)2: Presumably not all starters are the same -- which did you choose, and why? I think I remember hearing that some of the reason SF bread was so special (to those that think it special) was the local natural yeasts... is this true?

Date: 2007-02-05 04:34 pm (UTC)*shrugs* I've always wanted to try that. Make bread that was specific to a certain area (like SF sourdough), knowing that it would mututate over time and location.
