We've been together a long time. Over fifteen years. You've been a major part of my life. It's no exaggeration to say that you were a big part of why I was elevated to the Laurel.

But -- things change. People change. What worked ten years ago doesn't quite, now. No big blowups (well, not many) but over time, the slow changes mean a big difference between now and the way things were.

I'm sorry to say it, but all of a sudden it seems that the chemistry just isn't there anymore.

I think it's best if we start afresh.

1: you ... you... I was relieved to find out my initial conclusion was wrong.

2: Presumably not all starters are the same -- which did you choose, and why? I think I remember hearing that some of the reason SF bread was so special (to those that think it special) was the local natural yeasts... is this true?

Isn't it possible to create your own starter?? Something about setting a container out in open air for wild yeasties to gather upon...

*shrugs* I've always wanted to try that. Make bread that was specific to a certain area (like SF sourdough), knowing that it would mututate over time and location.
