My response is predicated on the assumption that "period" in this context means "medieval." In which case, I expect you will use bad meat. ;-) Which of course would be waaaay more interesting than any dumb chocolate recipe. (I mean, how hard can that be? "Unwrap chocolate. Serve with coffee.")
