...or this week's Resolution Recipe: Gingered Baked Carrots.
12 oz carrots, sliced
dab unsalted butter
1/4 oz fresh ginger, peeled and minced
2 tsp soy sauce
1/2 tsp sesame oil
1 tsp water
1/2 oz parsley or cilangro, chopped (or other fresh herbs - thyme might be good)
Roast carrots in a lightly-greased baking dish in a 400 degree oven for 10 minutes. Sprinkle ginger, soy sauce, oil and water over carrots and bake for 15 more minutes. Remove and sprinkle with herbs.
What worked: It was okay. It used up some of our carrots and was healthy.
What didn't: It was uninspiring. It needed more ginger.
Will I make it again? Probably not. It wasn't bad, but it just wasn't noteworthy.
