What to make when you've received bags of carrots from your weekly CSA box? Carrot cake, of course!
...or this week's Resolution Recipe: Gingered Baked Carrots.

12 oz carrots, sliced
dab unsalted butter
1/4 oz fresh ginger, peeled and minced
2 tsp soy sauce
1/2 tsp sesame oil
1 tsp water
1/2 oz parsley or cilangro, chopped (or other fresh herbs - thyme might be good)

Roast carrots in a lightly-greased baking dish in a 400 degree oven for 10 minutes. Sprinkle ginger, soy sauce, oil and water over carrots and bake for 15 more minutes. Remove and sprinkle with herbs.

What worked: It was okay. It used up some of our carrots and was healthy.

What didn't: It was uninspiring. It needed more ginger.

Will I make it again? Probably not. It wasn't bad, but it just wasn't noteworthy.

one of my favorite things to do with carrots is to roast them on high heat after tossign with a bit of olive oil (450 degrees plus) toss them in the pan every 10 min or so and take them out when they're done :). toss with some thyme just when they come out

the simplicity is the neat thing. sweet carmelized carrots with the thyme (and maybe a bit of sea salt). mmm.

MMmmmmm. Just got a batch of carrots at the bizarre Korean produce market. I know what I'm doing with them...

I'll second that.

Another fave is sauteed leeks and carrots. Heat olive oil, saute carrots on fairly high heat until they soften (pref. start to caramelize slightly), add chopped leeks and minced garlic, lower heat, when leeks and garlic start to turn color deglaze with sherry and serve him forth.

My carrots from last year are done. Actually there are still 5 in the ground, but they are woody and flavorless. The ones I planted in November aren't big enough yet, so we are reduced to buying at the store. *sob*

roasted with orange juice and ground ginger is another good one. Sometimes I add a little cinnamon, too. Put everything in the oven, toss occasionally until done.
