You Say Potato, I Say Salad

2 lbs unpeeled new potatoes, cubed
dash red wine vinegar
2 medium yellow onions, peeled and sliced thinly
1/2 cup parsley, chopped
1/2 cup olive oil
1/4 cup white wine vinegar
2 tsp whole oregano, crumbled
Cover potatoes with lightly salted water in a pot, add vinegar and bring to a boil. Parboil for ten minutes. Drain and cool.
Toss everything together. Serve hot, or chilled and served the next day.
What worked: This was rather easy and tasted fine. It was different from the usual mayo-based potato salad (or the occasional German bacon-based variety).
What didn't: I was too lazy to go upstairs and cut fresh oregano, so I used dried. Fresh would have been better and given more flavor.
Will I make it again? Sure, I'll rotate it in on occasion. This probably would work with cauliflower for a mock potato salad too.
