This week's Resolution Recipe: Sesame Agretti Salad
1/4 cup chopped leeks
2 tsp olive oil
1 bunch agretti, stemmed and cut in 1" lengths
1/2 tsp black pepper
1 tsp water
splash sesame oil
1 tsp sesame seeds
Saute leeks in olive oil for one minute, then add agretti, water, and pepper. Cover and steam over low heat for ten minutes. Cool and add sesame oil and seeds. Serve cold.
What worked: This was good - like a Japanese salad, which was probably the inspiration. Didn't need any salt as agretti is salty to begin with. It would go well with some tuna tartare, or wrapped in nori...
What didn't: I'd saute the leeks in sesame oil to begin with. I added a bit too much water which I had to drain off before seasoning with the sesame oil and seeds.
Will I make it again? Yup, although this is the third different dish I've used agretti for.
