1 T vinegar (I used reduced balsamic; a champagne vinegar or light herb vinegar might be nice too.)
1/2 cup fresh basil leaves
1 clove garlic (hah!)
1/4 cup olive oil
1/2 tsp salt
Mash garlic into the vinegar. Chop the basil finely (I used an herb chopper) and whisk in with the salt. Gradually whisk in olive oil until it emulsifies.
What worked: Nice delicate basil flavor, good green color.
What didn't: It was a mistake to use it on salad. A bit of the basil came through but it was overwhelmed by the salad.
Will I make it again? I might - probably worth trying as a topping for fish or chicken. I used the GSP as guinea pigs, but I don't think people ate much of the salad when there were tons of other good food available.
