Doesn't have to be easy, just "new".

2 medium beets
2 apples, peeled and cut into eighths
1 Tbsp horseradish
1/4 cup blue cheese, crumbled
Wrap beets in foil and roast at 400 for an hour until tender. (I wrapped in foil and stuck them in the smoker, since I was smoking bacon. It worked well in cooking them, not so much in imbuing smoke - the foil absorbed all the smoke, predictable in hindsight. Oh well.) Cool and peel the beets. Place all in a food processor and blend well. Serve with crackers.
What worked: This would be a good way to use beets if you don't like them. We do, but it wasn't bad as a sauce alongside burgers. (Which I also grilled in the smoker.)
What didn't: It was fairly nondescript, in flavor as well as appearance. Some roasted garlic might punch this up.
Will I make it again? I doubt it. There's nothing wrong with it, but it's not compelling enough for a repeat.
