Nov. 23rd, 2008 11:37 amThis week's Resolution Recipe: Leek and Sorrel Pancakes with Smoked Salmon.
4 leeks, cleaned and chopped
2 cups sorrel, washed and chopped
butter (I used lard from house-cured bacon)
2 eggses
1/4 cup flour
vegetable oil (more lard)
smoked salmon for garnish
sour cream for garnish (I used creme fraiche)
chopped chives for garnish
Heat a skillet over medium-high heat and add grease. Saute leeks until tender but not brown. Add sorrel, cook briefly to wilt, and remove from heat to cool.
In a medium bowl, whisk eggses until frothy. Whisk in flour until smooth. Add leek mixture.
Heat griddle over medium-high heat and film with grease. Drop about 2 Tbsp mixture on griddle for each pancake; cook until brown, about 1-2 minutes, flip, and repeat. Remove from griddle and top with salmon, sour cream, and chives. Serve warm.
What worked: Quite tasty. Attractive. They're intended as appetizers but we had them for Sunday breakfast with a bit of prosecco on the side. Yum yum.
What didn't: The leeks and sorrel would have to be pureed in order to get smooth silver dollar circles; these blobbed. Pureeing the veg would also allow for more even browning.
Will I make it again? I don't think so. They were good but not really worth the time investment.
