Jan. 18th, 2009 10:45 amLast week's Resolution Recipe: Pecan-Crusted Salmon.
2 8-oz salmon fillets
2 Tbsp melted butter
1/2 tsp lemon pepper (I used 2 cloves crushed garlic and a bit of lemon juice)
1 tsp fines herbes or similar herb mix
1/4 cup brown sugar (I used about 2 Tbsp)
1/4 cup crushed pecans
Heat a grill to medium high. Spray a large piece of aluminum foil with spray oil. Place the salmon on the foil, skin side down. Mix the butter and herbs (and garlic and lemon juice) and brush onto the fillets. Seal the foil loosely, leaving a bit of breathing room. Grill for 6-10 minutes, until salmon is flaky but not dry.
Remove from heat and open packet. Sprinkle with the brown sugar and close the foil to melt it. Re-open, pat on the pecans, and serve.
What worked: Certainly easy and pretty. Nice contrast of fish and nut crunch.
What didn't: I used the toaster oven, so 10 minutes was not enough. Since I habe a code I couldn't taste anything.
Will I make it again? Probably not. There's nothing wrong with it, but I don't think I'll bother keeping it.
