I made [livejournal.com profile] deathbytamarind's lemon chicken last week. It was quite good (although I had to add garlic to the lemon juice/soy sauce marinade). It also required a 10 minute finish in the toaster oven to fully cook in the middle. But still, it was tasty and different.

I should have added that I pounded the chicken pretty flat so they'd cook up nicely in the pan. But you made it work anyway! Good job chef!

"Oh and tonight I made a Sara Moulton recipe for dinner: lemon chicken. The secret to delicious and not sloppy/nasty/greasy lemon chicken is to marinate the meat in fresh squeezed lemon juice and soy sauce, then dip it in the flour, egg wash, and panko mixed with sesame seeds. Then you sautee the chicken breasts six minutes on either side and it comes out perfect. There's so much flavor and a good crunch. Since I performed poorly at dinner twice last week with a rushed chicken mole and a lackluster seafood curry, this dish saved me. My new family raved about it."

I've read two chapters and I have to take it back to the library this Friday. I suspect I may not be able to read the rest of it this time 'round - school and job are prohibiting much leisure reading.
