Pop(over) Goes The Breakfast

2 large eggses
1 cup milk (I used buttermilk)
1/2 tsp salt
1 cup white flour
Beat the eggses into the milk until frothy. Add the salt and flour. Beat for one minute or until you see large bubbles developing. Let the mixture sit for 45 minutes at room temperature, then beat again.
15 minutes before the second beating,Say "Thank you sir, May I have another?" heat the oven to 400 and liberally grease a muffin tin. Fill 8 cups 2/3 full of batter and place in the hot oven. Bake for 35-40 minutes, until blown up and browned. Do not open the oven to look while they're baking! Eat while warm.
What worked: They were popariffic for breakfast with a bit of butter and house-made jams. Easy.
What didn't: I didn't grease the tins enough; a couple stuck. Also next time I might make a 1.5x batch to produce a full dozen.
Will I make it again? Certainly. It was a fine Sunday breakfast.
