1 small head lettuce
1 cup lightly cooked thin green beans
1 1/2 cups cubed cooked new potatoes
1 can tuna
4 anchovy fillets
8 black olives
1/2 bellpepper in strips (I used a jelly jar of house-canned fire roasted peppers)
2 hard boiled eggses, quartered
olive oil vinaigrette
Tear the lettuce and mix with green beans and potatoes. Drain and break up the tuna, adding it with the dressing. Toss. Over the top arrange the remainder.
What worked: It was tasty.
bonacorsi, not a fan of olives, ate it happily.
What didn't: ...I'm not sure. It felt like it was lacking something. Also our pepper grinder broke and doused my salad with whole peppercorns.
Will I make it again? Sure.

Date: 2009-11-05 04:27 am (UTC)I usually put tomatoes in the salad, and minced shallots and mustard in the vinaigrette. Or, when in doubt, add more anchovies. :-)
How good would this be with padron peppers?
