This week's Resolution Recipe(ish): Spring Soup a (peu pres) l'Ariane.
1/2 lb onion, chopped
1 small head garlic, chopped (about 1 oz)
olive oil
1 lb new potatoes,peeled and chopped
1 3/4 lb butternut squash, peeled and chopped
thyme, tarragon, nutmeg, saffron, salt, and pepper
Saute onion and garlic in oil until golden. Add squash and potatoes, with water barely to cover. Simmer for 20 minutes until veg are soft, then drain and puree. Add herbs/spices.
What worked: It was okay, but tastier after I added some half-and-half. It was even tastier after I threw in some house-cured guanciale.
What didn't: I used too much of the veg water while pureeing, so it was too thin. A bit on the boring side. The potatoes were jumping out of my hands when peeling, so I stopped. They're new potatoes with thin skins so I didn't think it mattered anyway.
Will I make it again? Maybe because we get these things in our CSA box and it's another use for them, but I wasn't excited by it.
