Playing Adventure - the Atari 2600 8-bit game with a square protagonist and ducklike dragons - on my iPhone made me absurdly happy.

I would think that Adventure would translate well to a touch interface. The old Arcade game Quantum would be ideal (not to mention Missile Command...Trak Ball games I imagine would hold up well).

The movement is actually linked to how you tilt the phone. It takes a bit of getting used to but isn't that bad.
