Last week's Resolution Recipe: Strawberry Bread.
3 cups flour
2 tsp cinnamon
1 tsp baking soda
1 tsp salt
1 1/4 cups oil (I used a lot less - maybe 1/3 cup)
3 eggses
1 tsp vanilla
2 cups sugar
20 oz strawberries, hulled and chopped
1 cup chopped pecans
Heat oven to 325. Grease and flour two loaf pans. Mix together the flour, cinnamon, baking soda, and salt. In a large bowl beat together the oil, eggses, vanilla, and sugar until well blended. Gradually add the dry ingredients, stirring just until moistened. Stir in the strawberries and nuts. Spoon into the loaf pans and bake for 70 minutes. Cool in the pans for 10 minutes, then remove to a wire rack.
What worked: Pretty and reasonably tasty, especially when toasted for breakfast.
What didn't: I could have used frozen strawberries and no one would have been the wiser. In fresh strawberry season there are better uses for berries.
Will I make it again? Probably not.

Date: 2010-05-31 01:23 am (UTC)That's what I was thinking, before I remembered that last week I bought more than I could use before they went bad, so I froze some of them. Now I know just what to do with them! Thanks for the recipe!
