Cilantro that the wife will eat.

1/2 cup grapeseed oil (I used about 1/4 cup rapeseed oil)
2 T white wine vinegar (I used white balsamic)
4 garlic cloves, chopped or crushed (I used... more than that)
1 T lime juice
1/2 cup parsley, chopped
1/2 cup cilantro, chopped
4 roasted red peppers, chopped (I used house-made fire-roasted peppers. I eagerly await getting another bag from Mariquita so I can make more - we're almost out.)
1/2 cup olive oil (about half of what I used was taken from the jar of roasted peppers I canned last year with olive oil to keep them fresh)
2 T onion, minced
2 tsp crushed red pepper flakes
salt and pepper
Mix the non-oils together, then beat in the oils. Let sit for 20 minutes and check the seasoning. Use as a side sauce for grilled vegetables, meat, or fish. Or as a dynamite sandwich spread.
What worked: Oooh, this was good.
What didn't: There wasn't enough.
Will I make it again? I am making more today. I want to make a ginormous batch and jar it up so we can have it year-round.
