How could I forget the bear? I love that when told a local had shot a bear, and did we want it, the immediate response was "Yes please, and I know a period recipe we can use." From multiple people.

It was worth trying. Honestly one of the other groups that got a chunk did a tastier job - they marinated it for 12 hours and then made a curry stew. Since the bear was lean it came out better than our roast. But we used a period recipe. For bear!

I keep thinking that if we'd cut ours into a couple of pieces, that the part next to the bone might have been more cooked, hence there would have been more to eat. Oh well, if there's a next time ....
