Nduja has been smoked and is hanging in the downstairs fridge. Guanciale removed from its cure and hanging in the oubliette. I am experimenting with the leftover coals in the cold smoker, and smoking almonds and cashews. So far they don't seem to have picked up much smoke flavor.
