This week's Resolution Recipe: Coleslaw with Bacon Buttermilk Dressing.
1 lb cabbage, shredded
1/2 medium onion, sliced thinly
1 large carrot, shredded
salt
6 ounces bacon, crumbled (I used lamb bacon as it was what was accidentally grabbed)
2 T olive oil
1 T caraway seeds
2 tsp sugar
2 T cider vinegar
1/2 cup buttermilk
1/4 tsp dry mustard
pepper
Toss cabbage, carrot, onion, and 1 tsp salt in a colander or strainer set over a medium bowl. Let stand until the veg wilt, at least 1 hour. Rinse under cold running water and press, but do not squeeze, to drain; pat dry with paper towels.
Fry the bacon in a medium skillet over medium heat until crisp and brown, then drain and crumble. Stir together the buttermilk, oil, vinegar, caraway, mustard, and sugar in a medium bowl. Toss the veg in the dressing. Season to taste with salt and pepper and serve.
What worked: It looked nice and used the half head of cabbage from our veg box.
What didn't: "Salting and draining the onion with the cabbage helps mellow the harsh raw onion flavors." It also eliminated any flavor from the cabbage and carrot. Booooring.
Will I make it again? Nope.
