An Off-Color Recipe

3 beets
4-6 scallions, minced
1 chili pepper, minced
1/2 t pepper
2 cups yogurt
2 garlic cloves, minced (I used ...more)
pinch salt
2 T cilantro, chopped
Roast beets at 375 in a covered baking dish for 50-60 minutes, until tender. Peel and chop or grate. Reserve 1 Tbsp for garnish. Mix yogurt with the remaining beets and everything else but cilantro. Chill, garnish with cilantro and reserve beets, and serve as a topping for fried food or naan.
What worked: Pretty good. Definitely a standout given its bright pink color.
What didn't: It was spicy when I mixed everything but the beets in, but the beets absorbed all the heat. Apparently I didn't need to seed the chile pepper.
Will I make it again? Dunno. We don't eat much fried food - this was a topper for faux-lafel and worked okay, but.
