I just ordered a hippy chicken (and eggses, and livers which I'm thinking I will make into pate) for our monthly pickup in a couple weeks. I have a huge box of San Marzano tomatoes to pick up Thursday, to be converted into paste for the coming year's use. Also ten pounds of sweet Italian peppers that I will fire-roast and jar with olive oil. I'm thinking those will become Christmas presents for family members.

My CSA boxes have provided ten pounds of pears in the last two weeks. They look like Comice but they're crunchy-sweet/watery like Asian pears. Do you have any suggestions other than eating raw?

A test-microwaving for cooked texture is in order! I tried Bartletts in simple syrup with allspice two years ago and eventually threw them out because the pears never stopped releasing tiny gas bubbles. I suspect an insufficient processing time.
