This week's Resolution Recipe is one I made for breakfast at A&S: To poach eggs in goat's milk.
4 eggses
2 slices bread, lightly toasted
2 tsp sugar
1 tsp rose-water
Pour one inch height of milk in a shallow pan and bring to a low boil. Gently break eggses into the pan. Poach them until done, about five minutes. Dip bread slices in the leftover milk, place in a bowl, and set the eggses on top. Sprinkle lightly with sugar and rose-water.
What worked: It was an okay breakfast.
bonacorsi poached the eggses as she's much better at it than I am.
What didn't: It wasn't any sort of exciting. The goat's milk was a bit goaty but not that different from using cow.
Will I make it again? Meh, possibly. I might try some of the other poached eggses recipes first to see if they're more exciting. There's one that's sprinkled with (sour) orange juice that might be better.
What I'm reading: Neil Gaiman, The Graveyard Book
Get fresh, strained milk, bring it slowly to a boil and put eggs into it the way it done above. [Get an egg laid that day and carefully break it into a pot containing a little clear, cold water - that is done because if you put it into boiling water the egg will tend to sink to the bottom.] Let them cook. Have dishes ready with thin slices of bread that have been dipped in leftover milk. Then on the bread put the eggs garnished with sugar and rosewater. (Scappi, 1570)goat's milk
