2 lbs in-shell raw peanuts
2 Tbsp peanut oil
1-2 Tbsp kosher salt
Heat oven to 350. Rinse the peanuts under cool water to remove excess dirt. Pat dry and place in a large bowl and toss with the peanut oil and salt until well coated. Place on half sheet pans, making sure to spread them out into a single layer. Roast for 30-35 minutes, rotating halfway through cooking. Let them cool slightly before eating.
What worked: There's not a lot else we were going to do with raw in-shell peanuts from the CSA bag. They tasted fine.
What didn't: The oil and salt is about 4x the amount needed, even adjusting for the 1/2 pound we actually had. Also 30 minutes was too much for the 1/2 pound we had, so they were a bit over-roasted.
Will I make it again? Next time we get raw in-shell peanuts, sure.
