But chili is burbling away, dishes are done, trenchers for next week's panel are rising, and the 7 lbs of nduja is fermenting while I take a break. The nduja was unplanned, but the curvy upstairs neighbor helpfully pointed out that 4505 Meats had packages of pork offal that they were selling cheap, so I picked up three. I have since made room in the oubliette for where these will go.
