1 8 oz package cream cheese, at room temperature
1/2 cup mayonnaise
1/2 cup grated cheddar cheese
3/4 cup grated Parmesan, divided
1 4 oz can sliced jalapenos
1/4 cup panko bread crumbs
Mix the cream cheese, mayo, cheddar, 1/2 cup Parm, and the jalapenos in a bowl and pour into a baking dish. Mix the panko and remaining 1/4 cup Parm and sprinkle over the top. Bake at 375 for 15-20 minutes, until bubbling on the sides and golden brown on top.
What worked: It was good game food. I've been told there was a game on television today. It went well with Triscuits.
What didn't: I forgot to take the cream cheese out, so it wasn't room temperature and I had to mash it before mixing in everything else. The canned jalapenos weren't very spicy (I almost bought a couple extra fresh jalapenos when I was getting one for the nduja sausage) and the top never browned. It was plenty (temperature) hot though.
Will I make it again? Doubtful. We don't eat this sort of thing very often.
