And I Made It Anyway

This week's neo-hippy Resolution Recipe: Hippy Raw Kale Salad.
One bunch kale, stemmed and chopped
1-2 green onions, chopped (I used green garlic)
1 Tbsp red wine vinegar
1 Tbsp miso (paste, apparently. Who knew? I automatically think soup.)
2 Tbsp oil (it called for hemp. Of course it did. I used olive. Sesame would have been good too)
1/4 tsp garlic powder 1-2 cloves garlic, crushed
3 brown mushrooms, sliced
1/3 red bell pepper, chopped
1 Tbsphemp sesame seeds
Mix the vinegar, miso, oil, and garlic. Toss in the kale, green onions, and mushrooms, working it in to soften up the kale. Let stand for 10+ minutes. Just before serving, toss in the sesame seeds and bell pepper.
What worked: Despite my disparaging comments about dirty hippies, this was a reasonably decent way to use kale since we get it regularly in our CSA box. It wasn't too sharp or tough and was quite pretty with the red bell pepper. It was certainly better for us than cooking Braised Pork Belly over it.
What didn't: It wasn't exciting. The original said "miso" which I automatically thought "Soup? Well, it's going into the dressing, so okay..." Despite the actual recipe calling for paste, the soup was adequate in there. Paste would obviously give some more body.
Will I make it again? It'll probably go into the rotation. If nothing else, I have a bunch of miso soup packets to go through and I'm going to use them, dammit..
