This week's Resolution Recipe: Basil Oil.
Take a couple bunches of basil and strip the leaves. Pack them tightly into a couple mason jars, fill with decent olive oil up to 1/4" of the top, then pour white vinegar in the last 1/4". Let sit in a dark and cool spot for a couple months, inverting the jars every so often. Then strain through cheesecloth and you have an intensely flavored oil that is a great topping.
What worked: As advertised. It was a lot better than last year's attempt, which had me boiling the basil. That was much quicker but this is much, much more flavorful.
What didn't: It made too much for my pouring container. There is some detritus, but we will just not use the last 1/4".
Will I make it again? Next year, oh yes.
