Not Hasty Pudding
Nov. 12th, 2012 11:43 amThis week's Resolution Recipe: Apple Bread Pudding.
1 quart milk
1/4 cup melted butter
9-10 oz cubed stale bread
3/4 cup brown sugar or honey
1 cup cubed apples
3/4 cup pecans
4 large eggses
1/2 tsp salt
3/4 tsp nutmeg
2 tsp cinnamon
1 tsp vanilla
Heat oven to 350. Mix the milk and butter. Beat the eggses, salt, spices, and vanilla. Mix into the butter/milk. Place the bread, honey or sugar, fruit and nuts in another bowl and pour the milk mixture on top. Stir to distribute evenly, then pour into a greased 9" pan. Bake 40-45 minutes. Remove and let set for 5 minutes. Serve warm.
What worked: Pretty tasty. I was glad I'd cut down the butter and sugar from the original.
What didn't: Too much milk - the pudding didn't set up properly, and it was thinner than I like rather than custardy. Also, we only had about 1/3 cup pecans.
Will I make it again? Maybe, but it's not an automatic keeper.

That sounds tasty
