Dec. 10th, 2012 11:35 amLast week's Resolution Recipe: Curried Squash and Chicken Stew.
2 large chicken thighs
2 tsp olive oil
1 1/3 c chopped onion
3 garlic cloves, minced (Ha! I used... more.)
1 1/2 tsp curry powder
1 1/2 tsp cumin
1 tsp cinnamon
1 acorn squash, peeled & cubed
1 cup chicken stock
4 oz tomato paste
cilantro for garnish
Heat 1 tsp oil in a Dutch oven over medium high heat. Season chicken with salt and pepper. Add to Dutch oven and saute until browned, about 8 minutes. Remove to a plate. Heat remaining oil and add onion and garlic, sauteing until golden. Return chicken to the pot and add everything except the cilantro. Simmer for 15 minutes covered, then uncover and simmer for 10 minutes longer. Season with salt and pepper to taste and top with cilantro.
What worked: It was okay. It was something to do with the squash.
What didn't: Waaay too much effort to peel the stupid squash. If I have to have squash, I'd rather have a butternut, which are easier to peel and a bit sweeter. Flavorwise, it was okay. It tasted like it was missing something (but I couldn't identify what).
Will I make it again? Probably not.
