single pie crust
3-4 cups cranberries, divided
1 cup sugar
3 Tbsp corn starch
pinch salt
pinch cinnamon, ginger, cloves
Reserve 1 cup cranberries and chop remainder in a fud processor. Mix the whole and chopped berries with the remaining ingredients. Fill pie crust, then bake at 325 for 40-50 minutes.
What worked: Quite tasty and festive. It went very well with vanilla ice cream.
What didn't: The pie crust recipe was exceedingly tough. I should have defaulted to my standard 3/4 cup flour / 1/4 cup butter / 2 T water.
Will I make it again? Probably not. It wasn't difficult, but neither was it particularly exciting.
