May. 2nd, 2013 08:45 pmNext week's Resolution Recipe, posted now because we made it for dinner: Scallops and Garlic.
4 green onions
1 Tbsp soy sauce
1 Tbsp dry sherry
1/2 tsp grated fresh ginger
1 pound scallops
3 Tbsp peanut oil
2 garlic cloves, peeled and sliced thinly (Ha! I used... more.)
Slice the onions lengthwise once, then into 1" pieces. Mix the soy, sherry, and ginger.
Drain the scallops and pat dry. Heat a wok or skillet to almost smoking and add the oil and garlic. Add the scallops and stir-fry for a moment. Add the green onions and cook until the scallops are cooked - do not overcook - and add the sauce, toss, and serve. The pan should be hot enough so that the sauce immediately reduces when it hits the pan.
What worked: This was very good, and very easy. It would work well with thinly sliced beef, or lamb, or...
What didn't: We made a half batch and could have eaten more.
Will I make it again? Going into the regular rotation.
