aryanhwy: Blueberry Muffins.
4 ounces unsalted butter
1 cup sugar
1/2 tsp salt
2 large eggses (I used duck eggses)
2 tsp baking powder
2 cups flour
1/2 cup milk
1 tsp vanilla
2 cups blueberries
Heat the oven to 375. Cream the butter, sugar, and salt until light. Add the eggses one at a time, beating well after each addition. Add the baking powder, then the flour alternately with the milk, beating well after each addition. Mash 1/2 cup of the blueberries and add to the batter. Stir in the vanilla and remaining blueberries.
Mound the batter into 12 muffin cups. Sprinkle with cinnamon sugar if desired. Bake for 30 minutes.
What worked: These were really, really good. I cut the sugar down slightly and omitted the cinnamon sugar - they were plenty rich. I also didn't bother to mash the blueberries, which meant the color of the dough wasn't uniform but that's okay.
What didn't: We ate all of them that day.
Will I make it again? Definitely (although not very often)
