May. 19th, 2013 05:20 pmThis week's Resolution Recipe: Collard Greens with Bacon and Caramelized Onion.
3 strips bacon (I used house-made)
1 onion, peeled and chopped
1 clove garlic, minced (Ha! I used... more.)
1 Tbsp sugar
1 tsp salt
black pepper
1/8 cup + 1 splash cider vinegar
1 bunch collard greens, stems removed, sliced into 2" strips
1 cup chicken broth (I used about 1/3 cup)
In a large skillet, cook the bacon over medium heat until it begins to brown. Add the onion, stirring occasionally, until soft and caramelized. Add the garlic, sugar, salt and pepper, and stir. Pour in the 1/8 cup cider vinegar and deglaze the skillet. Cook to reduce the liquid by half, then add the collard greens and the broth. Reduce the heat to low and cook until the greens lose their bright color. Taste and add a final splash of vinegar.
What worked: It made a nondescript tough green quite yummy by adding lots of fat and sugar.
What didn't: It wasn't that exciting, despite the added ingredients.
Will I make it again? Meh.
