Jun. 16th, 2013 04:31 pmUm... I've lost track. Let's call it a draw and here's mumbledy mumble week's Resolution Recipe: Strong Green Sauce.
Take parsley, mint, tarragon, (or basil) and grind everything well together. Then take crumb of white bread soaked in strong vinegar, with salt and pepper, dissolve everything together with strong vinegar, and liking it you can put a small amount of garlic. (Messisbugo, 1557)
3 1/8 oz parsley leaves
3 oz basil leaves
3/8 oz mint leaves
9 cloves garlic (about 1 oz)
3 Tbsp bread crumbs soaked in 3 Tbsp white balsamic vinegar
6 Tbsp more white balsamic vinegar
Grind everything together and serve with... anything, really.
What worked: This was one of the hits from Erinwood. It's like a period chimichurri. I imagine it would go really well with lamb.
What didn't: I still liked it after recovering from event dehydration.
Will I make it again? Heck yeah - this is going into event (and probably mundane) dinner rotation.
