This week's Resolution Recipe: Ceviche with Chiles and Lime.
1 lb whitefish, skin removed, cut into 1/4" strips (The original called for grouper; I used a combination of squid, scallops, and shrimp.)
1/2 cup shaved red onion
no garlic (I used... more.)
1/2 cup lime juice (3-4 limes)
1 Tbsp jalapeno chile, seeded and minced
1 Tbsp Fresno chile, seeded and minced
1/4 cup cilantro, chiffonaded
2 Tbsp olive oil
sea salt
Combine the fish, onion, garlic, and lime juice. Toss to combine and marinate for at least 10 minutes. (If your fish is thicker, as mine was, you have to let it go longer.) Add the chiles and half the cilantro. Season with salt and mix in the olive oil. Divide among four plates and top with the remaining cilantro.
What worked: Yum. Easy.
What didn't: I was pretty happy with it.
Will I make it again? Sure.
