This week's Resolution Recipe: Peposo.
3 lb stewing beef, cubed
12 cloves garlic, whole (Ha! I used... more.)
2 Tbsp tomato paste
1 Tbsp salt
3/4 tsp chile flakes (I used half a cayenne pepper, chopped, from our CSA box)
3/4 tsp pepper
1 bottle red wine
Heat the oven to 200. Place the beef, garlic, and tomato paste into a Dutch oven. Sprinkle the salt, chile, and pepper evenly over the beef and stir to coat. Pour the wine into the pot. Heat on the stove over medium heat to a lively simmer. Lid the pot and transfer to the oven. Cook for 8 hours, until the meat is meltingly tender. Defat if needed and serve.
What worked: Certainly easy. Very rich beef flavor. I made it Saturday and then reheated it after rehearsal for the Sunday homeowners' meeting.
What didn't: The salt concentrated down - the soup was like a bouillon in its saltiness.
Will I make it again? Nah.
